old bananas.

this week, i am so thankful that old bananas have an use...a delicious use!

oh, banana bread. the love of my life...




four eggs
five over-ripe bananas (you know. when they're yucky and brown.)
one cup of shortening (half & half with margarine, if you want.)
two cups of white sugar
four cups of flour
two teaspoons of baking soda
one teaspoon of salt
one cup of chopped walnuts (this is optional. i'm poor, so nuts are a treat!)

beat eggs until thick. add mashed bananas. beat until smooth and liquid; set aside. (this mixture looks so gross. don't worry. it'll be delicious.) in another larger bowl, cream shortening and sugar together until fluffy. beat in egg and banana mixture. add flour, baking soda and salt. stir until mixed. 
put into two bread pans and bake at 300 degrees for 75 minutes. watch them after 60 minutes. mine usually finish around 70 minutes, so be sure to keep an eye on them.
next, eat at least two slices fresh from the oven, with butter.
